The HealthiEST Mocha Brownies

Don't ask why, but for some reason on Christmas Eve, I came home from our family Christmas party and the first thing on my mind was "I want to make healthy brownies." I wasn't even in a brownie craving mood, more so a baking mood and brownies were the the first thing that popped in my head.

 

Threw in some of my favorite everyday staple ingredients and voila, I present you,

the HealthiEST Mocha Brownies.

 

 

Just to make sure they were healthy AND tasty, I had a few taste testers try them out.

 

The verdict: perfect texture, just sweet enough, when are you making another batch?

 

 

The brownies are fabulous on their own, but if you really want that extra touch, and you're not Vegan, I advise adding my famous protein frosting.

 

 

The Famous Protein Frosting

Ready in | 45 minutes

Serving Size | Frosting for 12 brownies

Nutrition | 21.5 calories | 1.3 g Fat - 1.2 g Carbs - 1.25 g Protein

 

Total Nutrition for 1 Brownie + Frosting | 155.5 calories | 7.3 g Fat - 17.2 g Carbs (5 g sugar) - 5.25 g Protein

 

INGREDIENTS

1/2 tbsp Coconut Flour

1/2 scoop Chocolate Protein Powder

1/2 tbsp Kerrygold Butter

1/2 tsp Corn Starch

1/2 tbsp Maple Syrup

1 tbsp Unsweetened Vanilla Almond Milk

1 tbsp Cashew Butter

 

DIRECTIONS

Melt butter in bowl for 20-30 seconds in microwave. Let cool in freezer for 20 minutes. Add remaining ingredients and stir. Place mixture back in freezer for a remaining 20 minutes, or until completely cooled (not frozen). Throw in blender or in electric mixing bowl. Be sure there are no clumps in mixture (coconut oil is prone to clumping). Transfer mixture to a Ziploc bag. Zip bag up and with scissors, cut a VERY small hole in one of the bottom corners (note: better to be too small than too big. If it is too large, your icing will turn into mush). Drizzle frosting on brownies!
